Pear, Blue Cheese, and Walnut Salad
Ingredients:
- 2 ripe pears, sliced thinly (Bartlett or Anjou work well)
- 1/2 cup blue cheese, crumbled
- 1/3 cup walnuts, toasted
- 4-5 cups mixed salad greens (arugula, spinach, or a mix)
- 1/4 cup dried cranberries (optional, for sweetness)
Dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
-
Toast the Walnuts:
- In a dry skillet over medium heat, toast the walnuts for 2-3 minutes, stirring frequently until fragrant. Set aside to cool.
-
Prepare the Dressing:
- In a small bowl, whisk together olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, and a pinch of salt and pepper. Taste and adjust seasoning as needed.
-
Assemble the Salad:
- Arrange the salad greens on a large platter or individual plates.
- Layer the sliced pears on top of the greens.
- Scatter the crumbled blue cheese, toasted walnuts, and dried cranberries (if using) over the salad.
-
Drizzle and Serve:
- Drizzle the dressing over the salad just before serving. You can also serve the dressing on the side for guests to add as desired.
Tips:
- Upgrade the Walnuts: For extra flavor, toss the walnuts with a pinch of cinnamon and honey while toasting.
- Add Protein: Include grilled chicken or prosciutto to make the salad more filling.
- Switch the Greens: Try frisée or radicchio for a bitter contrast to the sweet pears and rich cheese.
This salad is elegant, flavorful, and packed with texture—perfect for entertaining or enjoying as a treat for yourself!
